    Hi guys,

    I think we should exchange some Christmas baking recipes that are IC friendly or that we make for the rest of our families. This is one of my favorite things to do at Christmas time. I'll go first. This recipe I am able to eat myself. It doesn't irritate my bladder.

    My Grandmother's Gingerbread;

    1 cup butter or margarine
    1 cup white sugar
    1 cup molasses
    1 egg beaten
    1 Tsp. baking soda
    1/2 cup warm water
    5 cups all purpose flour
    1/2 Tsp. cloves ground
    1 Tsp. nutmeg
    1 Tsp. cinnamon
    1 Tsp. ginger
    1/2 Tsp. salt

    Cream margarine. Blend in sugar and add molasses and egg. Beating well combine baking soda and warm water. Blend them in. Mix flour with cloves and spices. Stir into molasses mixture. Chill dough 2 hours. Once chilled, roll out dough on floured board. Take cutters dipped in flour and cut out shapes. Bake on greased cookie sheet at 325 degrees for 15-2o minutes.

    Enjoy and remember that we are all different so just because I acn eat them with no problem does not mean everyone will be able to. Please try a tiny bit at first to see if you will flare.

        Dessert is my Favorite!!!!!
        I baked this for Thanksgiving and everyone thought it was a nice twist.

        Pumpkin Marble Cheesecake
        • 1 1/2 C gingersnap crumbs--graham crakcer works equally well
          1/2 C finely chopped pecans (optional)
          1/3 C butter

        Combine crumbs, pecans and butter.
        Press onto bottom and 1 1/2 inches up sides of 9 inch springfrom pan.
        Bake at 350º for 10 minutes.
        • 2 8oz. Packages of Cream Cheese
          3/4 C sugar
          1 teaspoon vanilla
          3 eggs
          1 C canned pumpkin
          3/4 teaspoon cinnamon
          1/4 teaspoon nutmeg (I have no idea if this spice is dangerous for ICers--'ve left it out bfore without much of a difference in flavor)


        Combine Cream cheese, 1/2 C sugar and vanilla, mix at medium speed until well blended.
        Add eggs, one at a time, mix well after each addition.
        Reserve 1 cup.
        Add remaining sugar, pumpkin, spices to reamining batter...mix well.
        Spoon pumpkin batter and reserved cream cheese batter alternately over crust
        Cut thru batters with knife several times for marble effect.
        Bake at 350º for 55 minutes.
        Loosen cake form rim of pan, but cool before removing rim of pan.
        Chill
        10-12 servings
