I know we are supposed to stay away from sodium nitrite and sodium nitrate which is in bacon, ham, lunch meat, etc. but what about thiamin monontraite? I see it is in most breads. The info I'm reading says it only adds a minuscule amount of nitrate to our food. Thanks for any replies! What kind of breads does most people with IC had luck with?

After I was first diagnosed, I took myself off all bread since my symptons were not going away on all the other food I gave up. Since then (about 4 months now) I have tried fresh baked bread (Italian) at resturants and have been pain free. Don't do what I did after that though..I thought I could eat bread then and tried what I had in the cupboard for the family and had a bad reaction. It turns out that the bread had 4 ingrediants that we should not have, and one of them was vinegar! I won't do that again without reading labels.I have a health food store close by and I buy the bread they have in their freezer. They have a spring wheat and a rice one; they are also yeast free and it is great just to use what you need since you may be the only one using it. Good luck to you.

Thanks for the reply. I was eating the wheat sugar free bread and noticed one of the last ingrediets was vinegar so I quit that one. Someone told the Eziehiel bread should be ok but also said it's expensive. I might check that out this evening. I've been staying away from bread but would like to have a slice every now and then. I'm also still trying to find something to use on my salads. I have not acquired a taste for olive oil yet.PamComment

Hi friends, I LOVE bread, toast is my favorite. I make my own bread! And I mean the good ole fashioned knead by hand kind, not the bread machine kind. Actually I have been making my own long before I went on the IC diet. By making it myself I know excatly what's in it. And it tastes way better than store bought!! mmmmmmmm. Since there are a million recipes out there to try, you can find ones that only have your safe ingredients. If anyone wants the recipe that I use and help on how to make bread, just let me know. The recipe that I use takes about 4 1/2 hours start to finish but almost all of that is rising time and cooking time and cooling time. It also makes 3 loaves so I freeze 2. I trickiest part is not eating the first loaf all in the same day!"That which doesn't kill us, only makes us stronger."Comment
