My mother's birthday is coming up. She has IC - for her birthday - us girls want to make her either a Cake or maybe a blueberry pie. But we need recipes....please help us. It has to be totally IC safe.
Not sure if you saw this one too, but I thought I'd pass it your way in case you hadn't. Leslie (aka Stasny) just posted this the other day.
Hope your mom has a great birthday!
Best wishes, littlebera

Here is cake I can eat. I also make yellow butter cakes with vanilla frosting(lots of recipes on allrecipes.com). I also make a Coconut cream pie with safe Coconut from Whole Foods and put Cool Whip on it.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans.
In a large bowl, combine sugar and oil; beat well. Add eggs, carrots, and 1 teaspoon vanilla; beat mixture until smooth. Combine flour, salt, soda, and spices; add to creamed mixture, beating well. Pour batter into prepared pans.
Bake for 30 minutes, or until cake tests done. Cool in pans for 10 minutes, and then transfer layers to wire racks.
