Here is cake I can eat. I also make yellow butter cakes with vanilla frosting(lots of recipes on allrecipes.com). I also make a Coconut cream pie with safe Coconut from Whole Foods and put Cool Whip on it.
Carrot Cake
2 cups white sugar
3 1 cup vegetable oil
4 eggs
2 (4.5 ounce) jars carrot baby food
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans.
In a large bowl, combine sugar and oil; beat well. Add eggs, carrots, and 1 teaspoon vanilla; beat mixture until smooth. Combine flour, salt, soda, and spices; add to creamed mixture, beating well. Pour batter into prepared pans.
Bake for 30 minutes, or until cake tests done. Cool in pans for 10 minutes, and then transfer layers to wire racks.
Frosting:
3 ounce cream cheese(block kind)
2 cups powdered sugar
1/4 cup butter( softened)
1 teaspoon vanilla

Yummy white choc. Fudge Pie
I seen this on Paula's home cooking the other night and made it and also made one with white choc. also and it was so yummy and good. I did bake them 30 minutes instead but it may have just been my oven. They are so easy

2 squares (2-ounces) semisweet chocolate
1/2 cup (1 stick) butter
1 cup sugar
2 eggs, beaten
1 (9-inch) unbaked pie crust
Preheat oven to 375 degrees F.
Melt the chocolate and butter together in a heavy saucepan over low heat. Remove the pan from the heat and add the sugar, then the eggs; beat well. Pour the filling into the pie crust and bake for 25 minutes or until just set. Serve warm or cold, with ice cream or whipped cream
