    I haven't been brave enough to try any Mexican at home yet, but the couple of times I've been out to a restaurant with friends, I've gotten either a plain quesadilla or a quesadilla with mushrooms. I almost ordered a bean burrito and cheese enchilada last night, but I didn't want to have to ask them to hold the sauce in case the kitchen wound up making a mistake. I actually lived in Mexico for a couple of months one summer when I was in college, you'd be surprised how much authentic food is nothing like what we get served up here.
    I do have to wonder, though - how do people in with IC survive in Mexico, India, or Thailand? There has to be some living in those places!

    I have ideas on some things I think I can pull off next week, so I'll report back after I try them.

    Hey Mellusk, do you have any mexican dishes that are IC friendly. It has been a year since I have had a taco!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Thanks and God Bless

    Hi randi,
    Most "green" herbs should be ok, like basil, oregano, thyme, sage, and rosemary - things like that.
    As you work through the elimination diet and get to a point where you can experiment and begin to add things in, you might be surprised at what you can handle as opposed to what you can't.

    What sort of stuff does your husband like to make? Is he into pasta dishes, Mexican, or stir-fries?

    What spices can u tolerate in what amounts? Ginger turne turned out to be a PAIN and I learned the hard way not to eat anything hot.

    Also, my husband does the cooking and now he can't make just about anything he usually mnakes. I feel guilty. I have fibro and it's hard to predict when I will feel good.

    I hate this life.
