  • Fabulous new recipe

    OK, so being Italian, the biggest thing that I have missed since starting this diet was Pasta with Tomato Sauce! I was reading the posts and saw the idea of roasting red peppers and making a sauce so I decided to try it tonight...Thanks to Briza telling me how to roast them. I found this recipe on the back of one of my pasta boxes, and everything on it was IC friendly, so I tried it, and let me tell you, it was the first time since starting this diet that I was so happy! I finally felt like I was eating pasta with tomato sauce (even though it was red peppers). IT was so good I wanted to share the recipe with you. Here goes according to the box, you can add or delete anything you don't want.

    1 Box Barilla Mini Ziti
    Roasted Red Peppers (says one jar but I roasted some myself)
    3 Tb. extra virgin Olive Oil
    2 Shallots, finely chopped ( I didn't have any so I didn't use)
    2 Garlic Cloves, minced
    1 Cup Chicken Broth (I made my own)
    1/3 cup basil leaves

    COOK the ziti according to directions and return to pot
    HEAT oil in large skillet over medium high heat. Add shallots and garlic and saute'. Add broth and pepper puree', continue cooking 1-2 min. until heated.
    ADD pepper mixture to Ziti and toss. Sprinkle with basil.

    I also added some mozzarella cheese to it and it was sooooo good........

    The whole time I was eating it, I felt like I was cheating and was going to be in pain, it was so good and I finally felt like I had some "sauce". Thanks for the idea, these boards are fabulous!

      Sounds great!

      Could you explain how to roast the peppers.....this sounds so yummy!!!!

        Yes, it was really yummy! Briza posted how to roast them, you remove the seeds from the peppers and then put them in the broiler. When they start getting black, turn them over to get black on the other side. I think it took about 10 minutes total, then you take them out and put them in a ziploc bag for a few minutes ( I forgot why). Then you peel off the skin with a butter knife (I forgot to peel the skins and they were still good, ha-ha) then you put them in a blender with either a little water or chicken broth. I added some garlic and basil to the blender myself. Then "Voila" SAUCE!:woohoo:
        Then you can follow the rest of the recipe if you want or just eat it on the pasta like that...I can't wait to try and make my own pizza now with it!

          Sounds really good! If you leave the skins on you get a more smokey flavor. Your recipe is making me hungry right now! LOL Putting them in a plastic bag for a few minutes makes them sweat and loosens the skin so it's easier to remove with the knife.

            Meds For IC: Lyrica-25mg Glucosamine-500 MSM-500mg, Prosed Ds -When Flaring

            Other Meds: Levlite- Continious Birtcontrol, Micardis-40mg for High Blood Pressure

            Meds I have Tried:
            Topamax,Tofranil, Elmiron, Atarax, Cymbalta, Elavil, Enablex, Detral La, Prydium.
            Lexapro< Bad reaction to this med!
            Intstills, could not continue them due to some kind of reaction after 3rd instill. Tasted the lidocaine in my mouth, tongue and lips went numb then went into what seemed like a panic attack. Shaking, racing heart, tingling face/head, blood pressure shot up..

            Dx With IC in Nov 2006 with Hydro/Cysto
            Hydro/Cysto Caused Bladder to Rupture.

            Other Dxs-Vulvodynia,Fibro, Endo, IBS, HPV, Migraines, Spastic Colon, Mild Dysplasia.

              That sounds REALLY good and like something that the entire family would like!
              current meds:
              cytotec 200mcg twice daily
              toprol
              allegra

              ONLY 3 MEDICATIONS!!! YAY! Would never have dreamed this is possible

              dx: hashimoto's thyroiditis 1998
              dx: interstitial cystitis via cystoscopy with hydrodistention and biopsy 2003
              dx: endometriosis 2003
              dx: innapropriate sinus tacchicardia 2005

              meds tried but failed:
              elavil (6months)- severe tachycardia
              elmiron (1yr6mo.)- no improvement, nausea, hair loss, stomach ulcers
              a bunch of others
