  • Olive Oil anyone?

    I really love pasta and am trying to think of ways to make it taste good.
    I cannot find in my pamphlets about olive oil being good or bad for the bladder. Has anyone had problems with it, or know any info?
    If not olive oil, what other things can I have with pasta.
    Oh man I miss tomatoes.

    I am 23 and have had IC for about 3 years now.
    I have also had rheumatoid arthritis for about 21 years, I like to think I am used to pain.

    I am interested in hearing from people with similar circumstances as I am in, like having IC and RA, being in college, etc. I feel it helps.

    I eat Olive Oil all the time! I mix it with basil, garlic and Kosher salt and put it on my pasta...I have a great recipe if you look through these threads under fabulous recipe for a red sauce that I recently tried on my pasta made with roasted red peppers that was wonderful and gave me the feeling like I was eating tomato sauce. I too was missing my tomato sauce so much and this recipe really helped that craving. If you can't find my post, PM me and I will give it to you.

    I'm 47 years old, married 27 years. I have two wonderful boys and two wonderful grandchildren. I was diagnosed in 1994.       I think olive oil is fine. I can eat any cream or cheese sauces like alfredos, carbonaras, etc. Also, pesto sauce is generally good. I like spinach pesto.

      Spinach pesto:
      ingredients:
      4 cups washed fresh torn spinach leaves
      3 halved garlic cloves
      3 Tbsp. pine nuts
      1/2 tsp. dried crushed basil
      1/4 cup olive oil
      1/3 cup mozz. cheese (I sub. mozz for the parmesan)
      1/8 tsp. salt
      hot cooked pasta

      Place a few of the spinach leaves in the blender with all ingredients except pasta and cheese. Cover and puree until leaves are crushed. Keep adding in spinach leaves until they are all mixed in and crushed. Add cheese and puree until pesto sauce is smooth. Serve with the hot pasta

        I use olive oil in just about everything. Including baking. When I make chocolate chip cookies I use olive oil instead of butter. They turn out moistier (is this a word?? ) Only thing is make sure it is the light kind. I used the full flavor once and they tasted like chocolate chips with olive oil.
