  • Yummy Salmon recipe!

    Okay, well it's not quite a recipe...more of a "creation". There are a few recipes like this on the site, but this one is even easier! (nice for those of us still learning how to cook)

    My mom made this over memorial day and I thought I would ruin it because I always seem to ruin fish, but not last night, yay! I thought I would post it because it's very IC friendly and easy and yummy and full of protein, yay! I don't have actual amounts on here because...erm...well I never really measure things.

    What you need:

    Salmon! (I used the big refridgerated ones you get at Costo because they're cheap. )
    Minced garlic (Do it yourself, get the big jars of it from costo/smart and final OR they make tubes with fresh moist garlic in them, but be careful because some of them have preservatives, etc.)
    Olive oil (Yummy! I like extra virgin, but regular will work)
    Butter! (Yay!)
    Any herbs you can tolerate (Rosemary and/or dill work great!)
    Salt and pepper to taste

    -First, preheat oven to 350.
    -Then mix enough minced garlic, herbs and butter to cover salmon in a bowl. -For one large salmon I used about 2 cups of garlic (we reaallly like it) and a half stick of butter.
    -Next coat the bottom of whatever pan/s you are using liberally in olive oil. If you want you can put some of the garlic mixture on the bottom of the pan as well.
    -Then cut the salmon into nice steak size pieces and rub them down with more olive oil and salt or pepper if you want. (mine were like 6 inches by 3 inches or so)
    -Put salmon in pan. Yay! Then spoon garlic mixture on top of salmon. (Make sure it's evenly applied.)
    -Cook for 20-35 minutes depending on thickness of salmon. I would check after 20 minutes though.

    This was super easy and I was very satisfied with how it turned out. I hope you guys can enjoy it as much as I did!

    Just diagnosed w/PFD - Oh Boy!

    What I have tried: Elmiron, Lyrica, ,Methadone, Vicodin, Norco, Cystoprotek, imipramine, xanax, hydroxizine, trazadone, a bunch of anti-spasmotics and more I'm sure I can't remember.

    What I'm presently on:
    Noritriptyline 25 mg
    OxyContin 20 mg AM - 10 mg afternoon - 20 mg PM
    Zanaflex 2 mg at bedtime
    Percocet PRN for breakthrough
    Zyrtec
    Nasonex (allergies)
    Jolessa (b.c.)
    Physical Therapy 2x weekly

    I loved the recipe. I only cooked salmon once in the oven but I thought I over-cooked it a little. Also that time I bought salmon steaks already without the skin. Do you leave the skin on and just peel it when you eat?

    I ussually order grilled salmon at restaurants it is very nutricious and good source of omega oils.


    Since I'm on the IC diet dept I'm sharing a few IC Friendly healthy quick snacks: Odwalla carrot juice (or doit yourself),
    blueberries and cottage cheese puree;
    dates and coconut cookies (just follow a regaular oatmeal cookie recipe and add shedredd coconut and chopped dates).
    Laser cervical surgery after abnormal pap (moderate dysplasia) in 3/2004
    UTIs since mid 2004
    Recurrent yeast infections since mid 2005
    IC dx 3/2006
    V V dx 12/2006
    Other conditions: IBS, allergies, dry eyes.


    Current IC medications:
    Elavil (since 12/06) 10 mg;
    Cysta Q (since 5/07)
    Rephresh acid jel every 3 days
    D-mannose, fish oil, Calcium Citrate, Multivitamins & garlic pills (sometimes)
    Probiotics Femdophilus or other brands
    Gy-Na-Tren for yeast infections (started using it as needed since 2010)
    Other Rx:Omeprazole 20mg; benadryl as needed, Restasis


    Past Meds and why I stopped them:
    Elmiron: March to September 2006: headaches
    Lyrica:2 weeks in 2006: headaches
    Cystoprotek: from Jan to April 2007: nausea

    Femcon Fe (2/07 to 10/07):caused spotting/bleeding
    BCP:Loestrin (since Ocotber 2007) to stop spotting for 2 months. V V worse. Stopped the pill in Nov 07.

      It came without the skin, but that's my favorite part! The worst part for you too, hehe.

      You know what's really good with skin on though? Rainbow trout, ohhh yummy! It's really good grilled but I don't think I have graduated to that level yet, hehe.

        MMMM! This sounds so yummy! I always marinate my salmon with Soy sauce, brown sugar, garlic and olive oil. This has been a family fave but now I am trying to follow the IC diet so Soy Sauce is a no-no.
