  • Glutten Free/IC Safe Recipes?

    I was hoping some of you might have the answer I am looking for...I am needing glutten-free and IC safe recipes. I am having such a difficult time finding a nice variety. Also, I am trying to limit inflammatory foods such as red meat, processed dairy, processed meat, and sugar due to the amount of inflammation I have been experiencing from head to toe. Anything that I can do food wise to not encourage more pain and inflammation is awesome.

    I have switched to minimally processed low fat milk and will be going to raw milk soon so I am not as worried about the dairy component, but trying to find foods that will feed our family and keep me from hurting would be most wonderful.

    Current Meds
    Vesicare 10 MG 1 time per day
    Elmiron 100 MG 3 times a day
    Premarin Vaginal Cream
    Pyridium as needed
    Ultram 200mg/day
    Ultram 50mg tablets for breakthrough pain
    Gabapentin 300 mg 3 times a day
    Amitriptyline 50 mg at bedtime
    prednisone

    Additional Pain Management:
    Gangliar Impar Nerve Blocks (approx every 2-3 mths) - currently discontinued due to finances
    **Considering Interstim Implant this fall (2011)**

    I noticed that you are planning to switch to raw milk --- I'd really have to discourage anyone from doing this unless you are willing to pasteurize it yourself. There's just too much risk of tuberculosis, salmonella, streptococcus, and brucella, that people used to commonly get from drinking milk from healthy looking cows.

    My youngest was allergic to wheat as a small child and I used a lot of rice products and potato starch in cooking.

      I too am trying to go gluten free - here's what I'm eating today

      Breakfast - Celery Sticks with Cream Cheese
      Lunch - Brown rice wrap with gluten free turkey, a little cheese, lettuce, red peppers, cucumbers
      Snack - assorted veggies and gluten free hummus
      Dinner - steak with homemade mashed potatoes and another veggie

        If you eat eggs, I have a wonderful recipe for a potato starch sponge cake. I used to make it for my son all the time. He lives out of state now, but when he visits I often make one.

          Breakfast: scrambled egg whites with veggies.

          Lunch: Shrimp and Broccoli Stir-fry
          1 lb. frozen raw shrimp, thawed
          1 head fresh broccoli
          1 chopped red pepper
          2 Tbsp. olive oil
          2 garlic cloves, minced
          1/4 cup water
          In heavy skillet, heat olive oil over medium heat. Add garlic and vegetables and stir fry for 2-3 minutes. Add water and thawed shrimp. Bring to a boil, then reduce heat and simmer for an additional 4-5 minutes until vegetables are hot and shrimp is pink.

          Dinner: Seaweed Salad
          2 oz millet/flaxseed pasta
          1/4cup dry Wakame seaweed
          1 avocado
          2 tablespoon sesame oil
          Sprinkle of sesame seeds
          Salt to taste
          Soak the seaweed in a bowl with warm water for about 10 minutes. Boil the pasta. Chop the avocado. Add everything to a bowl with sesame oil and seeds.

          Snack: Almonds

            Try coconut or almond milk, both yummy and ic safe and NOT dairy
