  • salad!

Those of you that have a salad can you give me some examples of what you put on your salad to keep it somewhat IC friendly. I haven't had a salad since April 27th being diagnosed mostly sticking to eggs, rice chicken, milk, and water to drink but feel I am not consuming any vegetables for nutrition. Thanks!

I use Marie's lite creamy ranch dressing without problems. It's on the refrigerated shelf of the produce department at the grocery store.

Some people put cottage cheese in the blender with IC friendly spices to make a salad dressing.

There is also an IC recipe service you can subscribe to and they have four recipes for salad dressings that are good. (Go to google and type in My Food Style to get to the site) The subscription is $4.99 a month & is well worth it, I think.

I have salad frequently. I put on a bunch of different toppings (one cheese, a couple of veg, a protein, a couple of nuts/seeds). I use things like: feta cheese, mozza cheese, soft goat cheese, sunflower seeds, slivered almonds, dried apricots, hard boiled eggs, chickpeas, quinoa, grilled chicken, red peppers, olives, pears, apples, pumpkin seeds, avocado, fresh herbs (i.e. chives, mint, basil) ...

For a 'dressing' I just drizzle on some avocado oil and maybe a bit of honey and/or a dash of garlic powder. Once everything is tossed together, I never miss going without a traditional dressing.
