How about some dessert ideas!
sugar cookies, snicker doodles, divinity fudge, mini-cheesecakes, blond brownies, gingerbread cookies, chocolate dipped pretzels (you can have both white and milk chocolate so you can have some), cinnamon rolls, pecan pie, pumpkin pie, white chocolate cupcakes.....I could go on and on, but I just gained 5 pounds typing this!

Pizza!
You may want to look it up yourself on Discovery Health, but I was watching "Just Cook This!" with Sam the cooking guy, wrote down what he did and made this pizza for dinner last night! I also just ate the leftover slice for lunch and can promise you that it is good cold, too!
You'll need:
Pizza crust (bought or homemade. Sam keeps a store-bought one in his freezer)
Fresh spinach
Fresh Garlic
Mushrooms (2 kinds will be better, they sell gourmet ones, too!)
Goat Cheese
Parmesan Cheese
Olive oil
1. Stove-top drizzle a couple tablespoons of olive oil into a pan. Add mushrooms and let them cook for a couple minutes. Then add 4 cups or so fresh spinach ( I prefer baby spinach) It will look like the spinach is going to spill out, but it cooks down quickly. Add freshly minced garlic, keep stirring just until garlic is cooked, then take away from heat.
2. Add to your pre-cooked pizza dough: goat cheese, then add your mushroom-spinach mixture, top with freshly grated parmesan cheese. If you want to serve it warm, pack it up at this point and bake it at your friends house. Or bake it and serve it cold as an appetizer.

If you want to take something warm, how about artichoke, cream cheese and parm dip? Or bite size mini quiches? (If you want to show off!) Have fun!

Fancy crackers with cream cheese, topped with a black olive slice makes an attractive plate. Or maybe a fresh veggie tray with dip (you can enjoy the veggies alone) or a tossed salad.

I'm not much of a cook myself, but if you go to Jump Forum and look at the IC diet, you'll see recipes for appetizers and snacks.
Maybe you can get some ideas there.
Good luck!
