I made this the other day and thought it was heaven! Almost as good as my banana bread which I can no longer tolerate!
COCONUT DATE BREAD
1/4 cup soft butter
1 cup pitted dates, chopped
1/4 c brown sugar
1/4 c granulated sugar
3/4 c boiling water
1 egg, beaten
2c flour
2 tsp baking powder
1/2 tsp salt
1/2 c chopped walnuts (leave them out if you can't tolerate nuts)
1 c unsulphured coconut
1T plus 1 tsp vanilla (I know it's a lot but it makes it yummy!)
Preheat oven to 350 degrees.
Put butter dates and sugars in a bowl. Pour the hot water over them, stirring to cover them. Let them sit for 7 minutes. When cool, add the egg and mix well. Add the flour, baking powder and salt and stir just to incorporate. Add vanilla, nuts and coconut. Stir to mix in. Pour into a buttered loaf pan.
Bake at 350 degrees for 45 to 50 min or until a toothpick comes clean when stuck in the center.
Let it cool slightly before you remove it from the pan. (and try not to eat it all at once..dang I love fresh warm bread too much!)
