1-1/2 c. all-purpose flour
1 c. yellow cornmeal
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1-1/4 c. milk
2 eggs plus 1 egg white, slightly beaten
6 Tbsp. vegetable oil
2 Tbsp. melted butter
3 Tbsp. 100% pure maple syrup
1/4 tsp. vanilla extract

Preheat oven to 350 degrees F. and grease or generously spray a loaf pan with a non-stick oil spray. Combine flour, corn meal, sugar, baking powder and salt in large bowl. In a smaller bowl whisk together the milk, eggs, corn oil, melted butter, maple syrup, and vanilla. Add to the dry ingredients a stir just until well blended. Pour into prepared loaf pan. Bake at 350 degrees F. for 35 minutes or until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.
