3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 tablespoon cinnamon(if can tolerate)
3/4 cup vegetable oil
3 eggs, slightly beaten
2 cups sugar
2 cups pears, peeled and grated
1 cup nuts, chopped whatever you can tolerate
2 teaspoons vanilla
Directions:
1Combine flour, soda, baking powder, salt and cinnamon in a large bowl.
2Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla.
3Add to dry ingredients, stirring just until moistened.
4Spoon mixture into 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans.
5Bake at 325 degrees for 1 hour and 10 minutes or until done. Cool 10 minutes before removing from
pans.
