  • Pumpkin pancakes, perfect for Fall!

Here's a recipe for pumpkin pancakes that can be modified to be a bit more IC friendly. Skip the cloves, and also eliminate the ginger and nutmeg if those bother you. (I'm usually ok with ginger, nutmeg & cinnamon as long as I use them in moderation, which is fortunate.)
    Enjoy!

PS. I bought at Trader Joe's today, some pumpkin branches. Really pretty decoration for Fall... Here's a picture from google to see what they look like!

I love pumpkin in all kinds of things. I'm soooo glad I can have cloves, cinnamon, and nutmeg. Yummy! I don't know why we don't eat more pumpkin all year? The other evening we couldn't think of anything for dinner and ended up with pancakes --- I didn't think of the pumpkin, but I just had butter and a bit of powdered sugar on mine --- and totally enjoyed them.
