I was on the phone with my mother earlier today, and she's making a fruit tart based on a recipe from "Three Many Cooks." I've been exploring their blog as a result, and I found a recipe for granola bars:
2 cups rolled oats
1/2 cup wheat germ
1 can (14 ounces) sweetened condensed milk
Add-ins:
1 cup sliced almonds
1/2 cup of semi- or bitter-sweet chips or chunks (about 3 ounces)
1/2 cup dried cranberries or cherries
Obviously cranberries & chocolate are out! But there's a video that accompanies the blog entry, and one of the cooks explains that the "add-ins" can be whatever you'd like, as long as they add up to 2 cups.
They also note that if you want to make a gluten-free variation of these bars, you can substitute 1/2 cup of finely ground rolled oats for the wheat germ.
To prepare these bars, they recommend you put foil in a 9-inch baking pan and grease with a spray, and then firmly pack your granola-y mixture into the pan.
They recommend cooking for 30 minutes at 325 degrees F, and then putting in the freezer for a few minutes. Then cut into 16 pieces (or 24 if you want smaller bars).
I haven't made these, but they seem easy enough to do that I might try them!
