    True Donna! But I haven't had chocolate in so many years, carob tastes very chocolate-y to me.

    Also just tried mixing 1/2 tsp pure carob powder (my fave brand is Chatsfields) into a coffee cup full of vanilla ice cream. Stir & stir till it's that "soft serve" consistency, making sure to get the carob powder at bottom of cup all mixed in.

    This mixed up great & really did taste like chocolate ice cream. 🍦

    Carob is a good substitute for chocolate if you haven't had chocolate for a while --- it's not exactly the same taste, but it's close. I have peppermint extract in my herbs. This sounds delicious --- thanks for sharing.

    Easy Mint "Chocolate" chip ice cream

    Hi everyone! I recently made up some mint "Chocolate" chip ice cream using Chatsfield Carob Chips & wanted to share because it was YUMMY. Here's all you need:

    Your favorite vanilla ice cream

    Chatsfield Carob chips (the kind for baking...I order mine online)

    100% pure essential Peppermint Oil

    (This flavor essential oil is edible if 100% pure. Keep in mind essential oils are MUCH stronger than baking extracts...so use only 1 drop, not teaspoon, until you get taste you want. I used only 1 drop in this situation.)

    Put ice cream in bowl or cup.
    Mix one drop peppermint oil in well...until ice cream is "soft serve" consistency.
    Fold in Carob chips.
    And eat!

    This is SO easy. I've had IC 17 years & never thought to do this. Which sucks because I'd always LOVED mint chocolate chip ice cream. Now, it's back! 👍
