Ingredients:
1/2 cup vegetable oil (I used canola)
3/4 cup sugar
1-1/2 cup applesauce(IC friendly and if can tolerate)
1-1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 cups flour
1/2 tsp. baking powder
1/2 tsp. cinnamon (if can tolerate )
1 cup chopped nuts and raisins (IC friendly and if can tolerate)
Mix well all ingredients except nuts and raisins in a large bowl. Fold in nuts and raisins. Bake in 8" x 8" pan for 30-40 minutes at 350 degrees.
