    I've already made it and ate it! It was really good. I accidentally used my bell peppers yesterday and forgot to get more so I served it over rice noodles and broccoli. Very very good.

    Maple Turmeric Chicken

    Ingredients
    2 tablespoons olive oil
    2 tablespoons butter
    1 large onion, chopped(if can tolerate)
    1 red or yellow or green bell pepper or a combination, seeded and chopped(as desired and tolerated)
    1/4 cup mushrooms


    2 cups cubed cooked chicken breast meat
    3 cloves garlic
    1/4 cup pure maple syrup
    1 cup heavy cream
    Turmeric to taste and tolerance(Turmeric is on the try it list)

    Directions
    Heat butter and oil in a large skillet over medium heat. Add onion and peppers, and cook until onions are soft and translucent. Stir in cooked chicken and garlic. Cook, stirring for about 3 minutes, then stir in maple syrup, and cook for about 5 more minutes, until caramelized.
    Stir in Turmeric and heavy cream, and reduce heat to low. Simmer uncovered for 10 to 15 minutes, or until the sauce reaches your desired thickness.

    Serve over rice.(I used white basmati rice)
