I'm always looking for new recipes and have tried several on the IC Network. My husband cooks and this is a recipe that I love so much that I don't feel deprived AT ALL.
Easy Garlic Chicken
Adjusted for IC Diet
Ingredients: (2 servings)
2 boneless skinless chicken breasts. Pounded flat to an even thickness.
2 large garlic cloves, minced
2 tablespoons brown sugar
1 tablespoons extra virgin olive oil
1 tablespoon butter
Dry thyme, oregano, basil or other dried herbs of your choice
Dash of chicken stock (or white wine if able to tolerate a small amount)
Salt and pepper
Directions:
1. Preheat oven to 425 degrees.
2. In a 10 inch oven proof sauté pan heat butter. Salt and pepper the chicken. Sauté the chicken briefly on each side just until brown. Remove the chicken to a plate.
3. Add the olive oil to pan and sauté the garlic until tender but not brown.
4. Remove pan from heat and stir in brown sugar and dried herbs, add a splash of white wine or chicken stock to thin out the sauce. Stir until well blended. .
5. Return chicken to pan and stir to cover chicken with the sauce. Place the pan in oven and bake uncovered 15 to 30 minutes depending on thickness of the chicken.
