Potato Salad with Creamy Dill Dressing

  • Potato Salad with Creamy Dill Dressing

    Add to aprox 3 cups cooked potatoes
    1/2 Cup Celery
    2 hard boiled eggs crumbled
    1/2 cup Pickle cut into small pieces(Bubbies or my bread and butter see note below)*these are refridegerated vinegar free pickles*
    Set aside

    Creamy Dill Dressing:

    In a small sauce pan add
    1/2 Cup of Whipping Cream
    2 tsp Cornstarch
    2 tsp of dried Dill(or more if desired, if using fresh dill use about 1/2 cup)
    1/2 tsp garlic powder
    2 Tblsp cream cheese(in the block make sure IC freindly)
    Bring to a soft bowl and cook until thickened. Cool completely. Add to potato mixture. Serve and enjoy.

    Note To make Bread and butter pickle cut one large Bubbie's pickle and generously add sugar to coat. Put in sealed container and refridgerate overnight or for several hours.

    Diet Forum Moderator notes:
    •Not everyone can eat Bubbe's pickles or other pickles, if you're not sure you can have them without symptom increase, try the recipe without them! It will still be delicious
    •Also, be sure to buy the cream cheese in the block form, the tub cream cheese often has acidic preservatives.

    Tried:
    Detrol:only took one pill and it made me sick
    Elmiron:caused horrible pain(took 1 week)
    CystaQ:caused alot of burning and pain(only took one pill)
    Wellbutrin:only on it for three days as it caused alot of bladder pain
    Elavil:Took one pill and it caused a flare that lasted almost two weeks. It was the longest flare I've ever had. Never again..ouch
    Prelief:made my bladder burn and feel tingly.

    Take:
    Uracyst:Started May 19 2011
    Enablex:take one pill daily with no issues
    Naproxen:for pain as needed
    Baking Soda with water:as needed and it's a God send. It brings down my pain within 20 mins.
    Venofer: Started April 2012 by IV for low Iron. I do not tolerate oral Iron so this is the route I had to take.Does not bother my bladder but did have other side effects. I take Benedryl with each treatment to avoid side effects.
    Supplements:Whey Protein powder daily
    Dessert Harvest Aloe It has been helping alot but I can only take it every two days as my "die off" reaction has been severe.

    -Heparin/Marcaine/Sodium Bicarb home instills at night 3-4x per week, more often if needed

    -Antibiotic when doing an instillation to prevent UTI
    -Colace & SmartFiber to treat chronic constipation from meds, Fleet enema as needed
    -Dye Free Benadryl 50 mg at bedtime
    -"Your Pace Yoga: Relieving Pelvic Pain" dvd, walking, treadmill at gym
    -Managing stress= VERY important!
    -Fur therapy: Hugging the cat!

        Thanks Jill. I made both of these to have for lunch tomorrow. I will do a cold plate with veggies and blueberries. It would also be nice with veggies,Bubbie's pickles,sliced cheese,fruit and Nitrate Free lunchmeat.

            Hi,
            I contacted Bubbe's pickle company to find out what ingredients they have. Unfortunately, though they do not contain vinegar, they have a number of other spices on our "caution" list. I can't post what their ingredients are because the company does not publish that information, but they are not likely to be ok for the majority of IC patients.
            I'm sorry. I was hoping to be able to eat them myself....

              mish I buy them at the healtfood store. They are in the refridgerated section. I have never seen them in a regular grocery store.
              Kadi I found out about these pickles on this forum. I am glad I didn't know about the spice thing before I bought them because I may otherwise have not tried them. I have been eating them for over 1 year with no problems whatsoever and I do tend to be quite diet sensitive. I'm glad they have not bothered me. I usually don't eat more then one at a time so maybe that small amount is fine for me. I guess if you do try them only try a little at a time and see if you are ok with it. They are quite nice. I was a vinegar person before IC so this is my tartness now.


              ***Kadi I just found where I had seen these pickles mentioned and its in Fresh Tastes by Bev in the picnic basket and snack section. She mentions there that Bubbie's pickles are a good take along snack. Ummm I'm confused. I wonder if they have changed the recipe since she listed that.***

                    mareng9 no problem. My boyfriend actually loves this potato salad way more than the traditional one with mayonnaise. I actually agree with him. Hope you feel the same.
