  • Soy Sauce Substitute Recipe

I found this recipe in a blog. I have not tried it, but it has all safe ingredients, and most importantly NO VINEGAR. I have a recipe for Bourbon Chicken which uses soy sauce so one of these days, I'll be trying it again but with the Soy Sauce Substitute.

Here's what the blogger had to say about the recipe:

"The issue with soy sauce is the weird chemicals and the high salt content, not to mention the soy itself. I have used Bragg's soy sauce in the past which is a non-fermented version of soy sauce, with no weird chemicals or salt. It is still soy which is a problem for many people. I did a little bit of researching (aka Google search) to find an appropriate substitute and almost all of the recipes have some kind of vinegar in it. I have modified this recipe from a couple I found. It doesn't have the same tart taste as Bragg's, but still tastes pretty good".

    Soy Sauce Substitute

    • 1 1/2 cups broth (vegetable or chicken)
    • 2 tablespoons of molasses
    • 1 tsp ground ginger
    • 1 clove of garlic, skin removed
    • 1/5 of an onion (yep, just a small amount)
    • 1 tsp salt

    • Add all the ingredients together in a sauce pan and bring to a boil. Reduce to about half the liquid
    • Remove the garlic and onion
    • Store in the fridge

    Re: Soy Sauce Substitute Recipe

Hey, is onion really safe? I ate 2 days ago some falafel (ok, also plus strawberry juice and tomatoe cheese) and I got in 30 min really big cramps and pain. Falafel had a lot of onion, and mostly I have been ok with juices and tomatoe, in small amount. I am puzzled about onion still.

It's my understanding that onion if cooked/sautéed can be ok for some people. But if you know onion bothers you, I'd use onion powder instead.

Many ICers have a problem with onions, but you could leave that out. Your recipe sounds good. I just might try it.

That sounds really good. It seems you could lose the "soy sauce" altogether and just add some garlic, ginger, onions (I have done OK with small amounts of cooked onion)-if those aren't already being used-and molasses to whatever you are making. I think molasses is becoming a new friend. I just put together a quick BBQ sauce with molasses and it was pretty good. It has such a unique distinctive flavor. I have used coconut amino in place of soy sauce, and I am not sure I like it that much.
