  • Thai Peanut Butter Sauce

I use this on stir fry and also make a "Thai' salad with lettuce, cucumber, red bell pepper, scallion greens, and chicken. Also delicious on rice noodles.

2 Tablespoons peanut butter (or almond butter)
    2 Tablespoons pear juice
    2 Tablespoons soy sauce substitute
    1 Tablespoon brown sugar
    1 teaspoon garlic powder
    1/4 teaspoon ginger

I just heat everything in a small sauce pan on low heat until the peanut butter is melted and stir to combine the ingredients.

Here is a recipe for Soy Sauce Substitute. I'm sure there are others.

      Soy Sauce Substitute

      • 1 1/2 cups IC-friendly broth (vegetable or chicken)
      • 2 tablespoons of molasses
      • 1 tsp ground ginger
      • 1 clove of garlic, skin removed
      • 1/2 tsp onion powder
      • 1 tsp salt
      • Add all the ingredients together in a sauce pan and bring to a boil. Reduce to about half the liquid
      • Remove the garlic
      • Store in the fridge

I like this better than real soy sauce.

And----if you add sesame oil and sesame seeds, cut back on some of the molasses you can make a nice chinese chicken salad dressing.
